The blades of the 800DP Hibana series knives impress not only with their striking Damascus pattern but also with their hardness of about 61 HRC. The knife is sharpened using the traditional Honbazuke method on both sides. The traditionally curved handle of the Miyabi 800DP Hibana knives allows for fatigue-free work with all cutting techniques, and the perfectly balanced blade and handle make any task easy for the user.
Shotoh translates to something like "small knife" and is often referred to as a "petty knife." It is used for smaller dishes, such as fruits or vegetables.
