The Japanese Gyutoh knife from the Miyabi 6000MCT series is the perfect tool for a chef. It features a smooth blade available in lengths of 16, 20, or 24 cm, making it excellent for slicing fish and meat. Large vegetables are also not a challenge for it.
The blade is made of MicroCarbide powdered steel laminate and two layers of stainless steel with lower hardness and greater flexibility. This forged blade undergoes a process of hardening and cryogenic treatment (CRYODUR®) to achieve an extremely high level of hardness and maintain sharpness. The forging process gives it a unique pattern and distinctiveness. The knife achieves its final sharpness thanks to the Honbazuke sharpening technique.
The ergonomically shaped handle is made of Cocobolo, a dark, smooth wood, which beautifully contrasts with the blade. The handle has a curved shape that ensures comfort. A well-balanced grip is standard across the entire MIYABI 6000MCT series. Thanks to this balance, you can work for longer periods without feeling fatigued.
