The Japanese Gyutoh knife from the Miyabi 6000MCT series is the perfect tool for chefs. It features a smooth blade that comes in lengths of 16, 20, or 24 cm, making it ideal for slicing fish and meat. Large vegetables are also no problem for it.

The blade is made from a MicroCarbide powder steel laminate and two layers of softer, more flexible stainless steel. This forged blade undergoes a hardening and cryogenic process (CRYODUR®) to achieve an extremely high level of hardness and maintain sharpness. The forging process gives it a unique pattern and individuality. The knife gains its final sharpness through the Honbazuke sharpening technique.

The ergonomically shaped handle is made of Cocobolo, a dark, smooth wood, which beautifully contrasts with the blade. The handle has a curved shape that guarantees comfort. A well-balanced grip is standard throughout the entire MIYABI 6000MCT series. Thanks to this balance, you can work for longer periods without feeling fatigued.
