The SHOTOH knife from the MIYABI 5000MCD series is a feast for the eyes of all lovers of Japanese craftsmanship. It is perfectly suited for cutting, cleaning, and peeling vegetables and fruits.

The blade of this knife features not only a beautiful, unique layered pattern but also the steel from which its core is made – incredibly hard MicroCarbide MC63 steel. This core is embedded in 100 layers of two types of steel of different hardness. Moreover, the CRYODUR blade has been hardened through tempering with freezing at a temperature of -196°C. This process results in an extraordinary hardness of approximately 63 on the Rockwell scale, which provides the best cutting properties and unmatched flexibility. It is also worth noting that the SHOTOH knife blade has been polished by hand using the Honbazuke method – the best natural sharpening stones were used, followed by polishing on leather straps.

The handle of this exquisite knife is made from Masur birch wood, whose texture ensures that every piece in the series fits securely in hand and is unique. The noble appearance is complemented by a ferrule featuring the logo, wrapped in red fiber, and delicate mosaic pins. Additionally, the handle is shaped like the letter D, guaranteeing perfect balance and allowing for ideal control during use. As a result, even the most time-consuming dishes can be prepared effortlessly.
