The Rocking Santoku forged knife from the Miyabi 5000MCD series is sure to impress any Japanese knife enthusiast. Its blade has been sharpened using the traditional Japanese Honbazuke method, achieving a symmetrical edge with an angle of 19 degrees. The Rocking Santoku knife has universal applications, allowing for the cutting of vegetables, fruits, as well as meat and fish.
The core of the blade, made from MicroCarbide MC63 steel, is encased in 100 layers of two different stainless steels. This process results in a unique pattern for each knife and the appropriate flexibility required for kitchen applications. CRYODUR® hardened and frozen blades ensure exceptional cutting performance, corrosion resistance, and optimal blade flexibility.
The ergonomic handle made from Masur birch wood guarantees optimal control over the knife and fatigue-free use. The entire piece is a masterpiece of Japanese craftsmanship—a beautiful object and, above all, a very effective tool in the kitchen.
