The medium-sized CHUTOH knife from Miyabi is ideal for trimming, cleaning, and cutting various types of meat and fish. This is made possible by the thin, stable blade measuring 16 cm, allowing for full control throughout the food preparation process. Therefore, it enables even the most precise cuts. The core of the blade is made from special MicroCarbide MC63 steel and is encased in 100 layers of two types of steel with different physical properties. Furthermore, the blade's CRYODUR has been hardened by ice tempering at a temperature of -196°C. This process achieves an extraordinary hardness of about 63 on the Rockwell scale. For razor-sharpness, the Honbazuke sharpening method was used – crafted on the finest natural sharpening stones and then polished on leather strops.
The handle of the knife is typically shaped for Japanese knives in a D-shape. This design makes it comfortable to hold, and the use of Masur birch wood adds to its aesthetic appeal. The soft grains are clearly distinguished against the layered pattern of the blade. Small stainless steel accents and red lines make this knife a perfect combination of top quality, unparalleled sharpness, and excellent appearance.
