The Santoku, due to its versatility, is the best-selling type of Japanese knife, and the name comes from “Three Virtues,” referring to meat, fish, and vegetables.
The Japanese forged knife Santoku from the flagship Miyabi 5000MCD 67 series features an extremely hard core made from MicroCarbide powder steel to maintain the edge of the blade in optimal sharpness. The core is laminated with 132 outer layers of stainless steel of varying colors that create a unique pattern on the blade.
The blade edge is created using the Honbazuke technique and is symmetrical, handcrafted on natural stones, and polished on leather straps.
The handle is typical for Japanese knives with a D-shaped cross-section made from the highest quality black ash wood. The grip shape allows for better control and tireless work. The natural wood texture highlights the exclusive form and delights with its appearance. Combined with the distinctive layered blade, mosaic pins, stainless steel spacers with black fiber, and a head featuring a logo, it represents a masterpiece of craftsmanship and the flagship product of the Miyabi brand.
To keep your knife in the best condition, caution should be observed. Hand washing only is recommended along with sharpening on stones of appropriate grit offered by the manufacturer. Avoid using glass, ceramic, and stone cutting boards.
