Gyutoh - the flagship among Japanese knives, from the flagship series 5000MCD 67 by Miyabi is the ideal tool for chefs and a small masterpiece of Eastern craftsmanship.
It features a core made of MC66 MicroCarbide powdered steel, which provides extreme hardness and sharpness of the edge. The core is clad in 132 layers of more flexible steel with varying hues, creating a unique layered pattern on the blade. A complex cryogenic hardening process ensures a core hardness of 66 HRC. The edge is sharpened using the Honbazuke technique, which is symmetrical, handcrafted in multiple stages on natural stones and polished with leather.
The handle is made from the highest quality black ash wood with a D-shaped cross-section, allowing for better control and effortless work. The layered blade set in this wood, finished with a beautiful logo head and mosaic pins, highlights the exclusivity of this line.
To keep your knife in the best possible condition, caution is necessary. Only hand washing is recommended, along with sharpening on stones provided by the manufacturer. It is advisable to avoid using glass, ceramic, and stone cutting boards.
