Japanese MIYABI 4000FC knives invite you to discover the traditional art of knife making. This exceptional line combines beauty and sharpness, perfectly exemplified by the GYUTOH knife available in sizes 20 or 24 cm. Its double-edged blade is perfect for processing and slicing meats as well as preparing large vegetables.
The FRIODUR blade is made from double-tempered ice-hardened steel FC61, characterized by high hardness and durability even during intensive use. This line employs a selective hardening process in which the cutting edge is hardened to a significantly higher hardness, while the rest of the blade, up to the spine, retains greater flexibility. This process reveals the Hamon – the effect of a darker "wave" over the cutting edge known from Japanese swords. The Katana-Edge symbolizes the masterful craftsmanship found in the blades of traditional Japanese swords.
The aesthetics of Japanese kitchen knives are also evident in their handles. The MIYABI 4000FC series features an octagonal profile. This shape makes the knives safe and extremely comfortable to use, while the Pakka wood handle and the mosaic logo of the line ensure they look fantastic in any kitchen.
All MIYABI knives are produced by ZWILLING in their own factory located in Seki, Japan. This is where renowned German engineering from Solingen meets the incredible Japanese tradition of knife manufacturing.
