Japanese MIYABI 4000FC knives invite you to discover the traditional art of knife-making. This extraordinary line is a combination of beauty and sharpness, exemplified by the GYUTOH knife available in sizes 20 or 24 cm. Its double-sided sharpened blade is perfect for preparing and slicing meats as well as handling large vegetables.
The FRIODUR blade is made from double-hardened, ice-hardened FC61 steel, which is characterized by high hardness and durability even under intense use. This line employs a selective hardening process where the cutting edge is hardened to a significantly higher hardness, while the rest of the blade, up to the spine, retains higher flexibility. This process reveals the Hamon – the effect of a darker "wave" above the cutting edge, known from Japanese swords. The Katana-Edge is a symbol of master craftsmanship found in the blades of traditional Japanese swords.
The aesthetics of Japanese kitchen knives is always evident in their handles too. The MIYABI 4000FC series features an octagonal profile. This shape makes the knives safe and extremely comfortable to use, while the Pakka wood handle and the mosaic logo of the line ensure they look magnificent in any kitchen.
All MIYABI knives are produced by ZWILLING in their own factory located in Seki, Japan. Thus, it is a place where German engineering, renowned from Solingen, meets the incredible Japanese tradition of knife making.
