The medium-sized CHUTOH knife from Miyabi is ideal for cutting, cleaning, and slicing various types of meat and fish. This is thanks to its thin, stable 16 cm blade, which allows you to maintain full control throughout the entire preparation process. This makes it possible to make even the most precise cuts. Its wide range of advantages has won over chefs from all over the world.
The blade core is made of special MicroCarbide MC63 steel and encased in 100 layers of two types of steel with different physical properties. In addition, the CRYODUR blade has been hardened by ice quenching to a temperature of -196°C. This results in an above-average hardness of approx. 63 on the Rockwell scale. To achieve the sharpness of a scalpel, Honbazuke grinding was used – performed on the best natural grinding stones and then polished on leather belts.
The knife handle is shaped like the letter D, typical for Japanese knives. This makes it fit comfortably in the hand, and the use of Masur birch wood is also pleasing to the eye. The soft grain stands out clearly against the layered pattern of the blade. Small stainless steel accents and red lines make this knife the perfect combination of the highest quality, unparalleled sharpness, and excellent appearance.
